About this course
Overview
A HACCP plan has two audiences that rarely want the same document: the auditor and the shift supervisor. You work from hazard analysis through critical control point determination and monitoring to a plan that satisfies the first without becoming unusable to the second.
What you will be able to do
Learning outcomes
- Complete a hazard analysis for a product line
- Identify CCPs using a decision approach
- Set measurable critical limits and checks
- Design corrective action and verification steps
- Produce audit-ready HACCP documentation
What the course sets out to do
Course objectives
- Conduct systematic hazard analysis
- Determine critical control points
